Allow Admins to Override approvals

I would like to be able to allow Admin accounts to override an approval request from a finance rule. For example, if there is a finance rule that requires the Sales Manager to approve a request, but the Sales Manager is on vacation, I would like to be able to go in and manually approve the request as an admin.
